Raspberry and white chocolate cupcakes
Makes 18
225g (8oz) unsalted butter, softened
225g (8oz) caster sugar
225g (8oz) self raising flour
1tsp baking powder
4 eggs
3 tbsp ground almonds
150g (5 1/2 oz) raspberries, plus 18 to decorate
175g (6oz) white chocolate, plus extra and some grated for decoration
Preheat the oven to 180c (350f, gas mark 4)
Line bun tin with paper cases.
Place the butter, caster sugar, flour, baking powder and eggs in a large mixing bowl and beat with an electric whisk for 2-3 minutes.
Mix in the almonds and raspberries then spoon the mixture into the paper cases.
Bake for 18 minutes or until golden.
Melt the white chocolate and drizzle over the cupcakes.
Put a raspberry on each one.

Coloured chocolate strawberries
With chocolate covered strawberries you can dye white chocolate to make them look tastier, I dyed mine with red food colouring to make them pink.
The ultimate marble cake
You will need:
A marble cake
Chocolate frosting
Any chocolate
Chocolate buttons white and milk
Mal testers
And any other chocolate thing you like
Spread the chocolate frosting onto your amazing marble cake
Add all of your chocolates in any pattern
Grate white chocolate
Sprinkle it on top
And then you have created the ultimate marble cake!!!!!!!!!!!

Tip
When making cupcakes and you are not doing them in a mixer, mix the sugar and the butter until it is light and fluffy. The colour should be a very pale yellow.
Mickey Mouse cupcakes
You will need:
Chocolate cupcakes in red cupcake cases
Chocolate frosting
Chocolate sprinkles
Mini Oreos
Cocktail sticks
Hole puncher
White paper
Glue
Using the hold puncher, punch for each cupcake 2 circles
Cover the cupcakes with chocolate frosting
Then add the sprinkles
Get the cocktail sticks and put them into the mini Oreos
Stick them into the cupcakes
With the glue stick on the circles.

Red chocolate cupcakes
You will need:
Cupcake mix
Cocoa powder
Red food colouring
Butter cream
Dried strawberries or raspberries
Add the the cocoa powder to the mixture and also add chocolate
Cook the cupcakes for around 20 minutes
Leave them to cool then pip the butter cream onto your cupcakes
Put on to the dried strawberries or raspberries to decorate.

Butterfly cupcakes
You will need:
Vanilla cupcakes
Butter cream
Fondant icing
Food colouring
Food paint
Edible glitter
Spread the butter cream onto the cooled cupcakes
Get the fondant icing and put a few drops of what ever colour of food colouring you like
Fold it in
Cut out butterfly shapes and paint on patterns with the food paint
Place the butterfly's onto your cupcakes
Sprinkle on the edible glitter.

Raspberry crush friands
Makes 12
You will need:
175g/6oz butter
115g/4oz ground almonds
225g/8oz icing sugar,sifted
65g/2 and a half oz plain flour,sifted
6 egg whites
115g/4oz fresh raspberries
For crunchy sugar frosting:
Juice of 1 small lemon
150g/5oz caster sugar
Preheat oven at 200c/400f/gas mark 6
Grease the cups of a friand or bun tin with melted butter and dust lightly with flour
Turn the tin upside down and tap it to get rid of any excess flour
Melt the butter and then leave it aside to cool
Put the almonds, sugar and flour in a mixing bowl and stir together
In a separate bowl beat the eggs white lightly for 15 seconds
Add the egg whites to the dry ingredients and mix
Add the melted butter to the bowl and mix until combined
Pour the mixture into the cups and press one raspberry into the centre of each
Bake for 20-25 minutes until the friands are pale golden
Leave to cool slightly then turn them out on to a wire rack
To make the sugar frosting mix the lemon juice with the sugar and leave it for 10 minutes
Drizzle over the tops of the cooled cakes and leave to set for several hours.

Strawberry and apple slush
Makes 2 glasses
You need:
11oz/300g ripe strawberries
2 small eating apples
10ml/2tsp vanilla syrup
Chop the ends of the strawberries.
Chop the apples into large chunks.
Push the fruits through a juicer.
Stir in the the syrup.
Half fill 2 glasses with crushed ice.
Raspberry purée pancake
You need:
Freshly make pancakes
2 packets of raspberries
Icing sugar
Wash all the raspberries
Put 6 aside for decoration
Put the rest of the raspberries in a sieve
Put them down with a wooden spoon till there is almost only the raspberry seeds left
Pour it onto your pancake and put the 6 raspberries that are left on your pancake as decoration
Sprinkle icing sugar on top.
Raspberry and butter cream cupcakes
What you need:
Vanilla cupcakes
Icing Sugar
Butter
Raspberries
Wash the raspberries and dry them
Mix the icing sugar and butter together until light and creamy
Make a small well in the cupcake, make sure you keep the part of the cupcake you take out
Put the butter cream in the well
Cut the part of the cupcake you cut out into a triangle and put that into the butter cream point facing down
Then put a raspberry in the butter cream.
Hint of lemon smoothie
To make this smoothie you need:
9 raspberries
6 strawberries
1 banana
Half of a lemon juice
Raspberry and cranberry juice
Blend it all together
